Cilantro Lime Cauliflower Rice Recipe

What are the benefits of ricing your cauliflower you may ask? Well for those looking for a break from carbohydrates and want 77 percent of the recommended daily value of vitamin C, cauliflower is just the vegetable for you! The blend of cilantro and lime really elevate and mask that cauliflower flavor some may not be a fan of. Did we mention cauliflower rice is also paleo, vegan and gluten-free?

Serves 3-4

INGREDIENTS

  • 1 Medium Cauliflower Head
  • 1/4 Cup Freshly Chopped Cilantro
  • Juice of 1/2 Lime
  • Salt & Pepper
  • Your Chilli of Choice
  • 1 Small Diced Red Bell Pepper
  • 1 Scallion Diced
  • 1 Avocado
  • 1 Teaspoon Fresh Chopped Parsley

INSTRUCTIONS

  1. Remove green stems from 1 whole cauliflower.
  2. Chop into small crumbles or pulse in your food processor.
  3. Steam the riced cauliflower for 3 minutes.
  4. Add the chopped cilantro and juice from half of a lime to the rice. Season to taste with salt and pepper.
  5. Now time for the toppings! We used a white chicken chilli, diced red peppers, scallions, avocado, lime juice and fresh parsley.
